Parmesan Encrusted Tilapia

School was school but my workout and dinner were both awesome!

As soon as I got home I was out the door again to catch the sunlight for a nice run.  My boyfriend decided to join me (which was a treat) and together we rounded out 4 miles.  I would have taken a snap shot of my stats but I think the foot connector for my watch is out of juice.  I felt like I was kickin’ it big time today and my stats seemed horrible.  I’m just going to go with the dead battery idea to make myself feel better.

Moving on to dinner! This past weekend Publix had fish on sale and I nabbed some tilapia for a good price! I’ve been trying to cook it for the past couple of days but never found the time to put everything together.  On a good note, this recipe actually took no time at all!

Parmesan Encrusted Tilapia

(I used this for three different pieces of tilapia)

In a bowl I mixed the following:

1/4 cup Vigo’s Bread Crumbs, 1/3 cup grated parmesan cheese, 1 teaspoon of lemon pepper, and a couple dashes of basil. 

Coat each piece with the above mixture and bake at 375 degrees for 15 minutes!

Simple as that!

I served mine over whole wheat angel hair pasta but you can substitute just about anything!

I also enjoyed a rather large salad on the side because the leaves were starting to look a little limp and I feel so guilty wasting food!

Now I am off to write a paper about my adolescent experience! Fun stuff!

Weekly Goals

As a full time student I live by schedules and checklists.

Recently I had the idea to make a positive checklist.  Things that I would like to do, changes I would like to make, and other positive things!

Whether these changes are to make a difference for the day, week, or even the rest of my life will all depend.  Mostly I’m just hoping for some positive results and something I can stick to!

So, the goal for this week:

  • go to sleep at an earlier time.

The perks of getting a good night’s sleep are endless and its time that I pay better attention to my habits.  By no means am I a night owl but the earlier I can get to sleep the better start I will have to my already busy days!

What will you make your goal for the week?

Finding a church that fits.

Sorry it has been a little bit since I have last posted anything.  It was a busy week! Pretty much lots of class time.  On the other hand today is Sunday! It’s a fresh start to a new week and I plan to make it a priority to post more!

This morning I went to try out a new church.  It was a very inviting atmosphere and the people there were more than friendly! However, I don’t think that it was for me.  To be honest when I was looking over their website last night I thought I had found THE ONE, THE CHURCH.  Sadly, I am still on the lookout. 

As a little background I was born and raised Catholic and went to a Catholic school for 10 years.  I was literally raised at that church and loved the sense of family and home that it brought every time I went. When it came time for High School I attended a public school, being separated from a lot of my friends who went to attend the private high school in the area. 

It was then that I found myself wanting more from church.  After church one day a family friend introduced me to Young Life.  Naturally, my first thought was no.  My mother had different plans.  She would not take no for an answer.

Today I owe her so much for that trip.  It has forever changed my life.  Young Life introduced me to so much and looking through some old pictures I would do anything to go back! I cant believe it has been almost 5 years!

It was also through Young Life that I found an amazing church! However, that church is back in my hometown and my struggle still continues to find a new one. I know that good things take time! So, I am only waiting for that day to come!

Long Weekend Fun!

Sorry it has been a couple of days. Sean and I decided to spend a little extra time in Tampa than we originally anticipated. We went to visit his brother and sister and when we all get together there is never a dull moment.

I also got to see my family on Saturday! My little sister, Brooke was in an All State Chorus Showcase.  Middle School kids from all over the state got together this past weekend to perform a series of songs.  They all sounded ah-mazing and Brooke was the shining star of the day! Even if it was just for a day I loved every minute of the time spent with my family.

When we got back it was GAME TIME! I try and enjoy football but I am just not one of those people who can sit and watch the game(s) for hours on end.  It was fun to see all the guys get into the game though!

Later that night we went to a place in Tampa called Skippers.  I had never been before but Sean’s sister, Megan insisted that it was fun.  It was a good time, however it was freezing and hard to enjoy when you can’t feel your fingers or toes. Florida warmth where are you?!

Now it’s back to good old G-ville and back to school tomorrow. Bummer. It was a nice long weekend but now I need to step back into reality.  Laundry, grocery shopping, assignments…

Busy Bee

Well Thursdays are going to be a looonnnnggggg day for me! Classes start at 8:30 AM and do not end until 4:55 PM.  Ick. Although, today was a good transition because a lot of my classes got out a little early and we aren’t going through information overload just yet. 

When I got home I went out for a run attempting to catch the last of the sun before it disappeared. As I said yesterday, I am out of the loop.  I was slow and tired.  But I ran! So I count that as success! Overall my stats looked something like this:

Moving on! Naturally, I was starving when I got back and made myself a lovely dinner for one. Leftovers to be exact! Spaghetti squash with meat sauce (made with ground turkey) and a colorful salad.  I just recently started eating spaghetti squash, but boy am I hooked! I prepare it the same way that Julie does over at PB Fingers by cutting it in half (very carefully! I’ve had a couple slices of the hand instead of the squash from this sucker), carving out the insides and baking it at 375 degrees for around 45 minutes.  But, I’ve also seen it done this way by Brittany.

Don’t judge my pictures! The lighting is awful in my apartment and it is a new camera! I’m learning.

Now that my day is slowing down I look forward to watching the Bachelor! Hello Ben.

And after that I don’t know what to do with myself because I finished the Hunger Games last night and I am freaking out! Of course the book was amazing but now I want to know what happens next! My cousin better high-tail it on that reading and ship it my way before I go crazy!

Tomorrow is Friday! No school for me! Errands and lists galore to complete. Awesome.

Out of the Loop

As fun as the holidays are, the worst part is getting back on a schedule.  I know its only been the first week back to school but I feel out of the loop. I’m not used to my current class schedule, I haven’t figured out an exercise plan and my eat/sleep routines are all over the place.

As far as exercise I tried a new class today- Piyo Strength, which is a mixture of yoga and pilates.  According to the gym’s description the class was to include the “principles of sports stretch, strength training, conditioning, and dynamic movement. It is a unique class designed to build strength & gain flexibility.”

Overall, I wasn’t thrilled with it.  I’m not saying I didn’t enjoy it, but it wasn’t what I expected.  I wanted to sweat and feel the burn! Instead it was a lot of stretching and repetitive movement.  It was the first time the instructor had ever taught the class and the first time it was ever offered at the gym, so my hopes are that it picks up in the future!

As far as academic classes, the week has been pretty slow.  Not that I’m complaining.  Usually the first week is spent going over the syllabi and introductions.  With that being said one of my classes got out over an hour early so that gave me lots of time to catch up on my current obsession:

I’m less than 50 pages away from being done and it has been calling my name! So, I would blab a little more about my day but in all honesty I just want to read.

Once upon a time…

an awesome blog was created! Totally kidding, but welcome to Life’s Occupations! I've been a blog reader for quite some time and finally decided to give it a whirl and start my own. So, here we go!

I am a full time student with a busy schedule. When I don’t have my face buried in books I love making time for family, friends, food, fitness, and fun! That was a lot of words that began with the letter F… I’m a Florida girl who can’t live more than a few minutes from the beach.  So, my current distance is KILLING me. My favorite colors are orange and blue. Maybe not, but they are pretty cool colors.

I love cooking and staying fit but by no means does that make me a pro. I try to maintain a healthy, positive lifestyle and my goal is that you find me interesting enough to stick around!
